Culinary Explorer’s Summer Camp- Secondary level

Come spend a fun week on The Farm diving into the science of food!

Camp is Monday-Friday, 9am-Noon, Aged 15-18, (15 hours @$325)

The Program:

A week of "food meets science" for teens with inquiry-oriented, hands-on studies of Food-based S.T.E.A.M. (Science, Technology, Engineering, Arts, & Mathematics) education.

This 5-day intensive includes single day focuses on Biology, Botany, Physics, Chemistry & Marine Science.

Day 1- Biology (Macromolecules- carbohydrates, lipids, and proteins)

Day 2- Botany (Plant anatomy & physiology- flowering plants, reproduction & fluid transport)

Day 3- Physics (Maillard reactions- heat & energy transfer)

Day 4- Chemistry (Basic reactions & enzymes)

Day 5- Marine Science (Invertebrate anatomy & physiology: bivalves & crustaceans)

FOOD AS MEDICINE: A GLUTEN-FREE & LOW-SUGAR CULINARY WORKSHOP

Food As Medicine: A Gluten-free & Low-sugar Culinary Workshop 

Join Chef Meggy Kern, Executive Director of AESE & certified science instructor, for an informative morning full of unique culinary activities that will leave you prepared to go home and bake gluten-free and low-sugar delicious cuisine that your whole family can enjoy!

Chef Meg will start off this class with an informational lecture with, 
“The Comprehensive Guide to Gut Health” including grocery food lists and additional recipes written by AESE of San Diego. This will be followed by a hands-on culinary workshop which will answer all of your dire questions about which flours to use, what sugars and natural sweeteners to swap out with and all the tips and tricks! 

You will be provided with everything you need to participate in the workshop, taste, and take-home treats!

You will learn simple yet tasteful recipes to cook and bake for your family and friends during this summer season!

You will get to prepare tasty gluten-free baked goods in Sand N’ Straw’s Farm Kitchen including:

  • Ricotta-buckwheat pancakes

  • Sesame crepes

  • Gluten-free almond butter cookies

  • Cassava Flatbread

You will walk out of the class with a full belly and prepared cookies to take-home and bake whenever you want! You will also receive recipes for all foods made that day and an informational packet “The Comprehensive Guide to Gut Health” with grocery food lists and additional recipes written by AESE of San Diego. Once this class is completed, you may enjoy and relax with the beautiful scenery of The Farm at Sand N'Straw and the opportunity to purchase from their Farm Stand.
